I'll right, this isn't fair for us that aren't going... I'm so jealous of all of you..
The smoker/brisket/ribs comment is killing me... I was raised in KC and the BBQ we get up here in CT just doesn't compare.

I don't know yet,as this is also my first time there. But I can tell you this... look for the smoke .

T-hog,I just found out that I probably wont be bringing the smoker . It seems that smoking time will interfere with riding time. And in the mathematical time equation time,to much to smoke x to little to ride = smoker stays home.But still bringing a grill It seems that all that are coming in my group want to ride,and noone wants to watch the smoker.How ever......to any one else out there that might be up to the challenge Speak now or forever wonder what it would have been like.

Talk to Jabo, last year he did some great ribs. somehow he did the hard part at home and when he got to Paddys, all he had to do was heat them up on the grill. I tell you, they were some of the best I ever had... really.. I volunteer a grill and to eat some... I promise to eat some if offered don't worry!!! LOL

hmmm Stu you may have something there! I may have to do alittle testing to see the shelf life ,and travel time of semi smoked ribs. _________________ I'LL REST WHEN I'M DEAD!! I can tell you from experience that pre/semi-smoked ribs really don't travel well. Your best bet is to smoke them completly, vacuum seal them and freeze them. They will travel very well. Make sure they cool completly before you vacuum pack them. If you want you can sauce them up before you seal them. Then they'll baste in the sauce frozen. If you thaw them out slowly and then place them on a smoker (or a grill or barbeque) they will do fine. They don't taste as well as they do when they come directly out of the smoker, but they are good. The key is don't sauce them up until the last step.
Man, I just had a large meal a few hours ago, and this discussion of BBQ has me salvating for some good 'ol KC BBQ. Smokehouse BBQ on N. Oak Trafficway is the best by far.
