I recently installed a 32mm carb with a manual choke from a Honda 300ex on my 250. I just started it and ran around the yard it it has great potential. It starts every time no matter if its cold or hot.
It has a slight hesitation when starting from a dead stop but will bark the tires on concrete from a rolling start with about 2/3 throttle. I also have to ease into it at 3/4 throttle to full throttle or it boggs. I believe a slight adjustment in needle height and minor rejetting will make it fly.
I also have a 1 1/2 in muffler with 1 1/2 pipe attached to the original header at the flex joint. It looks like this combination is going to work 100% better than the stock carb and exhaust.

Good Luck!
That's awesome information... Keep us posted on the results of your carb. The final setup would be a good starting place for others... _________________ Chris Dierkens
